vinification

50 ha of vineyards (4.500 plants/ha). ‘Grand Cru of Gavi’ (best locations of Rovereto and Gavi).. ‘Sur Lie’ method: 7 months. Respect the origin of grapes, vineyard by vineyard, with separate winemaking (separate must, coming from different vines / ages of implant): up to sixty years old plants for Gavi DOCG ‘Black Label’. Fermentation in stainless steel vats. Ageing: 4 months in stainless steel vats.
