Strict selection and gentle pressing. Classic fermentation at cool temperature. The wine then remains on its lees for several months to increase complexity and matures further in French oak barrels.
Can be enjoyed besides pure fish dishes or raw fish with prepared salmon, avocado salad or other green salads and chicken dishes.

The vineyards, located on the river Vardar, the wine region of Skopje, extend over the hills of at least 300m above sea level, with a southern slope. The surrounding mountains provide an excellent microclimate. The mountain air blowing in this area actually reduce summer evening temperatures and keep the soil warm in winter. The vines are planted at a density of 5,500 plants per hectare and pruned using the Guyot method.

- vinification

The vinification starts immediately after harvest and it begins with the white varieties as they are first ripe. The processes of vinification takes place in special inox tanks and wooden vats. In order to achieve proper kinetics of the fermentation, each tank and vat is separately controlled and monitored for temperature, with data being graphically displayed several times a day.
